When I began to embrace a low carb lifestyle I thought my days of tomato sandwiches were over. How could I eat tomatoes and mayonnaise on WHITE BREAD! After all tomatoes have some carbs. And white bread is just about the worst thing a low carber can eat.
Last week was hectic and hot. This week was less hectic but hotter. As early as 8AM the humidity is nearly unbearable and the heat from the sun is scorching. But the farmer's brave the heat and so we go to support them and to shop. This, despite the weather, is a wonderful time for produce in NJ. Everything that we've waited all winter for is out and plentiful. And therefore, very inexpensive!
Despite the fact that I refer to my daughters. And despite the fact that said daughters live at home with us. They are all grown up and gainfully employed. They also have social lives. More and more frequently husband and I find ourselves alone for dinner. Dinner for two is sometimes tough for me. I've been cooking for at least four nearly every night for a quarter of a century. But I'm getting better. Husband loves chicken cutlets. I find them bland. But this easy recipe makes both of us happy.
I have been more and more concerned with eating fish lately. I eat only grass fed and pasture raised meats and poultry. Fish, is something we like and is good for us...BUT farm raised fish is not so good. (Read what they feed them!!! And how they're raised!) And the oil gushing in the gulf has me concerned about what the wild fish are eating. Yesterday I bought some wild caught....fresh from the ocean around NJ ....fluke. It looked beautiful.
I know I sound like a broken record. But find yourself a local market and buy some fresh fruits and vegetables. When watching your portion size for counting carbs....it's really the best to have delicious, freshly picked produce. Everything tastes better when it's fresh!
The market is bursting with produce! All of it beautiful! We had a lot of rain and warm weather in the early spring so the vegetables and fruits are coming in about two weeks sooner, and, alas, leaving sooner too. But this week there was everything to pick from...and I did!
My grandmother would call this relish. I would call this sauce. You can call it whatever you'd like, but do try it next time you're going to barbecue burgers, dogs, and/or sausages.
Carb wise....watch your portion. It's all good stuff...but onions and tomatoes have natural sugar which makes their carbs worth noticing in a recipe.
The weather was beautiful market morning. July, absolutely, but low humidity and relatively cool temps. We (me and daughters) got there around 8am (opening hour) and had a lovely and productive stroll. I love this time of year! We were having some guests for dinner (picnic) so I was really looking for some exciting stuff and wasn't disappointed.

Of course we bought mushrooms, tomatoes, corn, beans, zucchini.
I have been shopping at my local (Collingswood, NJ) farmer's market for ten years. For as long as it's been in existence. During the months that the market is open (May through November) I do nearly all of my food shopping there. Because I do that much shopping there I have had to come up with a way of being able to carry everything I buy. I do go back to the car (or send a daughter) when we simply have too much to carry. Remember...corn is heavy, tomatoes are delicate...one cannot simply dump everything into one bag or cart.
Dear husband's favorite dessert is coffee ice cream with hot fudge sauce. All of the hot fudge sauces I've tried to buy have either too much sugar or high fructose corn syrup. We don't eat high fructose corn syrup!
Thirty years ago when we were just newlyweds I discovered the easiest and best recipe for hot fudge sauce. When I dug it out for a Father's Day treat for husband I realized that the carbs in it were low as long as I used the finest quality chocolate...and why wouldn't I use that?
There is nothing quite like fresh New Jersey sweet white corn. When it's fresh picked you can actually eat it raw. Now I know some of you are wondering how corn fits into a low carb diet. Fresh corn, when cooked properly does not turn super starchy. That having been said. I limit my corn eating for fresh New Jersey corn.
