I was running late. Gathered random ingredients and came up with this. Rave reviews all around the dinner table!
Cut and clean 6 to 8 small peppers. Use the bottom only. Short sides are fine...in fact, preferred. Put them in a steamer (like the Asian bamboo steamer or a pot with a steamer insert)

Combine to make meatballs:
- 1 lb of ground pork
- 1 green onion chopped
- 1/4 cup of cooked barley
- 1 small zucchini, shredded
- 1/4 grated cheese (I used muenster)


Steam the meatballs in the peppers for 25 to 30 minutes.

While you're steaming the meatballs and peppers....in a skillet put 3 Tbsp. olive oil and 1 Tbsp butter,

and 3 cut up Jersey tomatoes. Salt to taste. Cook the tomatoes down for 15 or 20 minutes. Mash tomato chunks with the back of a spoon.

Pour the sauce over the peppers and serve.
