Dear husband's favorite dessert is coffee ice cream with hot fudge sauce. All of the hot fudge sauces I've tried to buy have either too much sugar or high fructose corn syrup. We don't eat high fructose corn syrup!
Thirty years ago when we were just newlyweds I discovered the easiest and best recipe for hot fudge sauce. When I dug it out for a Father's Day treat for husband I realized that the carbs in it were low as long as I used the finest quality chocolate...and why wouldn't I use that?
So...here we go (and as always...watch your portion size...but you can top your sundae with a pretty big ladle full of this stuff)...
In a heavy sauce pan on medium heat (do not want any of this to burn!!!) melt two tablespoons of unsalted butter. Add 3/4 of a cup of heavy whipping cream. When the butter has melted and the cream is warm add nine ounces of chocolate (chips or broke up). We used a candy bar that is 85% Cacao and low in carb. If you like something a little less bitter look for an organic bittersweet chocolate chip in the super market...or a good quality chocolate chip. Be aware of the amount of sugar in the chocolate. Do not use milk chocolate. Stir until the chocolate is melted and the sauce is smooth. Add 1/2 teaspoon of vanilla extract. Stir, again, until smooth.
Makes about 1 2/3 cups.

This is husband's sundae. Coffee ice cream (look for natural, low carb, and NO high fructose corn syrup...it's out there, keep looking), hot fudge sauce, and real whipped cream. Happy husband!
