Chicken dinner for two!

Despite the fact that I refer to my daughters.  And despite the fact that said daughters live at home with us.  They are all grown up and gainfully employed.  They also have social lives.  More and more frequently husband and I find ourselves alone for dinner.  Dinner for two is sometimes tough for me.  I've been cooking for at least four nearly every night for a quarter of a century.  But I'm getting better.  Husband loves chicken cutlets.  I find them bland.  But this easy recipe makes both of us happy.

Clean your chicken breast of any membranes or yucky stuff that you don't want to deal with when eating it.  Place in a place bag and pound out so that the breast is even in thickness.  Melt about 2 tablespoons of butter in a pie plate or flat bowl (for dipping).  Grate 2 ounces of a hard cheese (we like cheddar....you don't want anything that melts too runny) , and get about 1/4 cup of Panko crumbs (they're Japanese...very light and crispy...lower carb than breadcrumbs...found where the breadcrumbs are in most large supermarkets).  Mix the Panko crumbs and the grated cheese.  Take the piece of chicken and dip both sides in the butter.  Pat some of the Panko cheese mixture on the top of the chicken.  Take the chicken out of the butter and place it on a baking sheet with the Panko cheese side down.  Then pat some of the Panko cheese mixture on the plain upper side of the chicken.  Confusing to read.  Just make sure you dip both sides of the chicken in the butter and pat the Panko cheese mixture on both sides as well.  Put the two pieces of coated chicken on a baking sheet.  Place the sheet in the oven and bake at 350 for about 40 minutes.

Husband loves this dish!  I made some eggplant, zucchini, and tomatoes on the side.

And prepared a bowl of peaches and berries.  All in season and all fresh from out farmer's market.  

Just the two of us ate across the big table that usually holds four.  The food was only surpassed by the conversation and the company.
